BACK IN 2016 I'D JUST GONE VEGAN . . .
. . . but in my day job as a baker I was still using a ton of eggs and butter. It just didn't feel right.
I wanted to do something about it, but all the vegan baking recipes I found were just sort-of ok, and not good enough to serve to my (mostly non-vegan) customers. I had to find a way of baking without eggs and butter that was so delicious none of my customers would notice (or care).
